Ingredients
250 g salted butter
125 g caster sugar
30 g cocoa powder
300 g self raising flour
Filling
175 g salted butter
300 g icing sugar
1 tsp vanilla essence
Steps
1- Pre heat oven to 170’C fan.
2- With a mixer whisk the butter and caster sugar till fluffy.
3- Slowly add the flour and cocoa stirring together till all combined.
With the dough make 24 balls and spread them out over 2 baking trays. With either your fingers or a fork flatten the balls into a biscuit shape.
4- Bake for 10 mins.
5- Remove from the oven and leave to cool on the baking for a couple of mins before moving to a wire rack.
6- Meanwhile whisk the butter, icing sugar and vanilla essence together till light and creamy. Add to a piping bag and wait till the biscuits are completely cool.
7- Sandwich the icing between 2 biscuits and sprinkle a little icing sugar over the biscuits. Enjoy!
