Egg and Bacon Pie



1 sheet frozen shortcrust pastry thawed
7 eggs
200 gm bacon diced
Handful Chives chopped finely
Salt and Pepper
24 cm round flan tin


1- Pre heat oven to 200 degrees

2- Put the thawed pastry into greased flan tin and prick with a fork. Add baking weights and blind bake for 10 mins. Remove baking weights and bake for another 10 mins.

3- Add diced bacon to medium to hot frypan and cook until browned.

4- Add eggs to a bowl and whisk together, add chopped chives and seasoning.

5- Add mixture to blind baked pastry in the flan tin and put into the oven for 20 mins or until egg mixture is cooked through and pastry is golden.

6- Serve and enjoy!
