Crispy spicy tomato chicken



4 chicken pieces I used thigh
Clove garlic
1 fresh chilli pepper
8-10 pitted black olives
Teaspoon capers
400 g tin of plum tomatoes
Best quay ev olive oil
Salt to taste
Fresh parsley to serve
Small glass of white wine optional


1- Heat some oil in a pan. Add chicken skin side down and cook on medium until crispy. Remove and set a side. Now add garlic, chopped chilli, chopped olives and capers. Cook for 1-2 mins

2- Add the chicken back to the pan. Cook for about 2-3 mins then add the wine. Skip if not using. Add the tomatoes and cook down for a few minutes on medium high heat. Now turn down and simmer on low for about an hour until cooked. Stir a little during cooking. Serve with fresh parsley
