Vegan Cauliflower Buffalo Wings with Cashew Nut Ranch Dipping Sauce

 



Ingredients

For the Cauliflower

1 medium cauliflower
150 g plain flour
300 ml oat milk
2 tsp chopped garlic
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp cracked black pepper
100 g Panko breadcrumbs
120 g dairy free butter
50 g hot scriaccha sauce


For the Ranch Sauce:
150 g cashew nuts
150 ml oat milk
1 tbsp lemon juice
2 tsp chopped garlic
3/4 tsp salt
1/4 tsp cracked black pepper
1 small bunch of chopped fresh parsley



Steps
1- Preheat your oven to 180 ° C. Line a baking tray and set aside.
2- Put a small saucepan of boiling salted water on a high heat.
3- Add the cashew nuts to the pan of boiling water and boil for 15 minutes.
4- Strain and run under cold water to cool slightly.
5- Break the cauliflower into florets and set aside.
6- Put the flour, oat milk, garlic, cumin, paprika, salt and pepper into a bowl and whisk to a batter.
7- Pour the panko breadcrumbs into a separate bowl.
8- Tip the cauliflower into the batter completely coat the florets.
9- Transfer to the bowl of breadcrumbs, a few pieces at a time, and toss gently until well coated.
10- Spread the cauliflower pieces over the lined baking trays and bake for 20 minutes.
11- Melt the dairy-free butter in a saucepan and stir in the hot sauce.
12- After 20 minutes, remove the tray from the oven and pour over the hot sauce, rolling the cauliflower around until the pieces are fully coated.
13- Put the tray back in the oven for 20–25 minutes, until a sharp knife glides into the thickest parts of the cauliflower and the outsides are really golden brown and crispy. Remove from the oven.
14- While the cauliflower is cooking, put all the ingredients for the ranch sauce except for the herbs into the food processor and blend until smooth and creamy. Transfer to a serving bowl.
15- Finely chop the parsley and add most of them to the sauce, reserving a little for garnish.
16- Serve the cauliflower wings while they're still hot on a serving plate, sprinkled with the remaining herbs and with the ranch dip on the side.
