Tom Yum Gai, Soup with Chicken, its Hot Spicy and Sour



2 Chicken breasts cut into large Pieces. Should be chicken thigh
4 Birds eye Chillies
1/2 inch Galagal cut into 4 or 5 Slices
3 lime leaves or 4
3 Lemongrass sticks 4 Shallots cut in half
1 juice lime
4 Cups Water
2 tbls fish sauce
1 tbls Tom Yum paste

1- Add a little oil to the wok and add the chillies add more if you want it hotter, fry for 1 minute when blackened Take off set aside.
2- Add the water to the pan add the shallots, Lemongrass, lime leaves, salt, chillies
3- When the water boils add the chicken pieces and the fish sauce then add the tom yum paste stir in and let Cook on simmer for 15 - 20 minutes.
4- Serve with a side of jasmine rice. Enjoy
