Pocket pizza toast



4 bread slices
2-3 tbsp oil
30 g butter (7-8g for each toast)
4 pieces cheese
For the meaty pizza fillings
1 sausage, chopped
1 slice ham, chopped
2 tbsp sweet corn
For the vegetarian pizza fillings
1/2 green pepper, chopped
1/2 red pepper, chopped
2 tbsp sweet corn


1- Prepare pizza fillings chopping all ingredients into mini cubes.

2- For each bread slice, cut out a square inside the bread to make a hole. Set aside.

3- In a frying pan, heat some oil and stir fry the pizza fillings.

4- Place the cooked fillings in 2 separate bowls, one for vegetarian version and the other for the meaty version.

5- Add in 1 egg into each bowl and mix well.

6- Using the same frying pan, heat some oil and place the bread edges. Fill the hole with pizza filling and egg mixture.

7- Place a piece of cheese and drizzle ketchup on top, then cover with the square bread.

8- Press the bread gently to “close” the pocket. Remove the bread from the pan then add in 7-8g butter.

9- Flip the bread as you place it back to the pan. Cook for 1 min until the other side is cooked to crispy golden brown.

10- Flip again then set aside.

11- Repeat for the other bread toasts.

12- Serve them on a plate and cut in the middle to enjoy the ooey-gooey cheesy fillings!
