Pickled lettuce soup with pork ribs



1000 g Pork ribs
1000 g Pork spines
2 litre Water
8 Garlic cloves, smashed
5 Coriander roots, smashed
2 tbsp White peppercorns, smashed
2 tbsp Salt
1 tbsp Vinegar(optional)
900 g Pickled luttuce, cut into 2-3 inches
5 cups Steam rice for 5 people


1- Prepare all the ingredients and cook a night before serving.

2- Add pork ribs, pork spine, salt, garlic, white peppercorns, coriander roots and water to a Pressure cooker. Cook for 30 mins. Remove excessive fat from the surface. Transfer to a large cooking pot.
Note: if you use slow cooker. Cook for 3-4 hr.

3- Heat the cooking pot with medium heat. Add pickled lettuce. Let it simmer for 15-20 min.

4- Let the soup cool in the room temperature. Keep it in the fridge overnight.

5- On the next day, reheat the soup and serve with a cup of warm steamed rice for each person.
