My Homemade Delicious Tomato Soup



​1 tbls Olive oil
1/2 Red Onion
2 Large Garlic Cloves crushed
1/2 Tsp Ground Italian Herbs
1/4 Cup Passata
1/2 pint Water keep half of that back
1/2 Aubergine
3 tbls fresh Chopped Basil
1 Heaped Tbls Ricotta
1 Can Crushed Cherry Tomatoes
8 Fresh Cherry Tomatoes
1/4 Cup Red Wine (I had some ( C'Natura Montepulseano d'abru)
1 tbls Tomato pure√®
Season with Salt + Black Pepper
1 little fresh chopped Parsley to garnish


1- Add the oil to a pan add chopped red onions fry for a minute then add the Garlic and italian seasoning fry for 2 minutes

2- Meanwhile cut up the Aubergine add to Half the water leave 1/4 For later and add the fresh Basil. Bring to the boil and turn low and simmer for 5 minutes

3- Open the can of tomatoes and pour in with the Aubergines stir and leave on low heat

4- Add the passata to the red onions and stir in, then bring to the boil add the Wine and stir in let it bubble on high for 3 minutes

5- Add the cherry tomatoes whole to the Aubergine in the pan

6- Next add the onion mix in the pan with the Aubergines and stir in

7- Next add the Ricotta stir in then add the Tomato pureè stir to mix

8- Add the seasoning and the rest of the water stir bring to the boil and then turn low simmer for 5 minutes

9- Add all to the blender and blend for 2 minutes add back to the pan it will be smooth and thick. Bring to the boil then serve. With a little chopped parsley on top.
