Mexican style chicken stew



500 gms Chicken fillet washed and drained
2 medium sized onions,sliced to thin wedges
1 red jalapeño,sliced
5 garlic cloves Grated
1 tbspn paprika
1 tbsp oregano dried
1 tspn cumin powder
Salt as required
1 tbspn black pepper powder
2 tomatoes,ground to paste (you can used finely chopped tomatoes.)
3 green chillies,chopped
1/4 cup Oil
1 cup chopped cilantro (I didn’t have cilantro,I went for coriander leaves)


1- Mix all spices well into chicken fillet along with oil.add grated garlic onion,jalapeños and green chilli and mix well.

2- Heat a pan and add the chicken,onion mix.close and cook till water is released and chicken is half done.

3- Add the tomatoes can used finely chopped tomatoes as well.I went for tomato paste,just for a fancy…mix well and cover and cook till chicken is well done.boil till gravy reduces.add salt if needed.add chopped cilantro or coriander leaves.serve hot with Mexican rice.
