Honey Pickled Radish



400 g daikon
1 tsp pink salt
1/3 cup brown rice vinegar
1/3 cup water
2 tbsps raw honey


1- Chop daikon into cubes.

2- Mix salt, vinegar and water in a microwave bowl. Microwave on high for 2 mins.

3- Stir in honey to dissolve.

4- Pour over daikon while mixture is still hot. Let rest at room temperature for 1 day. And then 5- store in the fridge. We ate it after 2 days.
