Healthy and yummy gluten-free pancakes

 

Ingredients

1/2 cups self raising gluten free flour
1/4 chia seeds
1/4 ground flax seed
1/2 cups any milk of your choice
1/2 cup plain yoghurt
3 medium eggs
1 pinch salt
2 teaspoons vanilla essence (you can never have enough)




Steps

1- Mix all your dry ingredients using a whisk.

2- Whisk in all of the wet ingredients except the eggs until combined.

3- Whisk in the eggs but don’t over mix it or your pancakes will become rubbery.

4- Heat a non- stick pan quite hot and add a tablespoon of ghee or oil of your choice.

5- Spoon one soup ladle in the centre of the pan, and when bubbles form, flip the pancake.

6- Eat with toppings of your choice
