Crockpot Shredded Italian Chuck Roast



1 (2-3 pound) Chuck roast
1 can (14.5 ounce) low sodium beef broth
1 can (15 ounce) diced tomatoes
1 can (6 ounce) tomato paste
1 envelope Good Seasons Zesty Italian dressing
2 onions, chopped
1 orange pepper, chopped
1/8 teaspoon black pepper
10 cloves garlic, minced
2 cups small red baby potatoes
1 cup baby carrots
Cooked egg noodles OR prepared mashed potatoes OR crusty bread


1- Rinse and pat dry your Chuck Roast, trim off any visible fat and set roast to the side 

2- Add into crockpot your low sodium beef broth, diced tomatoes, tomato paste, dry envelope of Good Seasons Italian dressing, chopped onion, chopped

3- Add into crockpot your Chuck roast, turning to coat evenly on all sides……

4- Add into crockpot your small red baby potatoes and baby carrots ……..

5- Cover crockpot and cook on low heat for 8 hours, or until roast shreds easily with a fork ……

6- Shred roast with two forks, remove any visible fat, then serve over cooked buttered egg noodles OR mashed potatoes OR crusty bread
