Creamy Butternut Squash Stew



Olive oil
3 pounds butternut squash, cubed
1 onion, chopped
1 red pepper, chopped
2 zucchini, peeled, cut into chunks
10 cloves garlic, minced
1/8 teaspoon black pepper
1/8 teaspoon crushed red pepper
1 tablespoon Italian seasoning
1 tablespoon oregano
2 bags (6 ounce) fresh baby spinach
1 jar (24 ounce) pasta sauce, your favorite flavor !!! 
1 cup heavy whipping cream
Crusty bread 


1- In a large pot heat some olive oil …..

2- Sauté your butternut squash, onion and red pepper until butternut squash is slightly softened …….

3- Add to squash your zucchini, minced garlic, black pepper, crushed red pepper, Italian seasoning, oregano and fresh baby spinach, cook until spinach has wilted ……..

4- Next add in your pasta sauce, cover pot and cook on low heat for 30 - 45 minutes, or until all veggies are tender, stirring occasionally…….

5- Add into sauce your heavy cream, cook on low heat for about 10 minutes…….Serve with some crusty bread and enjoy!
