Cooked Chicken & Vegetable Casserole



1 Large Chicken breast cut into big bitesize pieces
1 tbls Olive oil
1/4 Yellow Onion diced
1 Garlic Clove crushed
1/2 Tsp Garlic Granuals
1/4 tsp Thyme, Lemon and Bay Salt
1/2 tsp Cracked Black Peppercorns
1/2 Tsp Cajun Seasoning
1/2 Cup Passata
1/2 Broccoli pulled into Florets
1 cup Sweet Peas
1 good Handful of Chantanay Whole Carrots, skin and root left on
4 potatoes cut into 4, peel left on
1 handful closed cup Mushrooms
3/4 Avocado
1/4 - 4 inch length Courgette cut chunky
2 Dried Chicken stock cubes
1 Vegetable Stock cube
2 Litres Water


1- Wash all the Vegetables and get them ready.

2- In a frying pan heat up the oil and add Onions cook for 1 minute then add Crushed Garlic dried garlic and Chicken chopped into bitesize pieces add all the dried spices to fry until chicken is coloured not cooked.

3- Add the water to the pressure cooker and add the chicken and veg Stock cubes and stir. Then add all the veg stir.

4- Add the passata to the chicken and stir in then transfer to the pressure cooker add in the water with the veg stir and add pressure cooker lid. 30 minutes

5- When done leave in pressure cooker until your serving it then heat up and serve and Enjoy hot.
