Cinnamon Spiced Sweet Potato Soup



​2 small onions, chopped
2 garlic cloves, chopped
4-5 sweet potatoes, peeled and chopped
1/2 tsp cinnamon
Pinch nutmeg
Pinch cayenne pepper
500 mls vegetable stock
Salt and pepper


1- Gently fry the onions in olive oil for 10 minutes. Add the garlic and fry for another 5 minutes, then turn the heat right down and stir in the spices.

2- Add the chopped potatoes and stock. Bring to the boil then simmer with the lid on the pan until the potatoes are tender.

3- Blend until smooth then serve
