Chicken Pesto Bites



4 slices bread, toasted
2 medium skinless boneless chicken breasts, cut into bite-sized pieces
1 tbsp Olive oil
3 tbsp red tomato pesto
3 tbsp cornflour
Smoked paprika, optional
Salt and pepper, season


1- Tear the toasted into pieces and drop it into food processor, burst it until you have breadcrumbs of the sizes you want.

2- Season the chicken in a bowl with salt and pepper, smoked paprika (optional), add olive oil, red pesto, mix until chicken coated all over.

3- Add cornflour and breadcrumbs, tossed chicken pieces to coat it all over.

4- Lay the chicken pieces on a lined baking tray.
Cook straight away: cook in the oven 190°C for 10-12 minutes or until cooked through.
5- For cooking later: put the tray in the freezer, let them set for 30 minutes then store them in a zipper food bag for cooking later.

6- Serve with dipping sauce and enjoy!
