Cabbage potato masala curry

 

Ingredients

250 gms Cabbage sliced into thin strips
2 big potato’s,peeled,cut into medium size cubes,half cooked
1 tsp turmeric powder
Salt as required
Masala paste
100 gms grated coconut
2 tbsp coriander powder
1 tbsp chilli powder
5-6 black pepper corns
1 sprig Curry leaves
5 shallots
Tempering
1 tbsp mustard seeds
2-3 dry chilli
2 sprigs curry leaves




Steps

1- Prepare masala mix first.Dry fry grated coconut on Low heat till slightly brown,add shallots,curry leaves,pepper corns and sauté well.once coconut is golden brown and turns aromatic,add coriander powder and chilli powder and sauté fora minutes.remove from heat and transfer to a bowl or blender.once cooled add adequate water and grind to paste.keep it aside.Adjust spice level as required to your family’s taste.

2- Now in a pressure cooker,add the potatoes and water and cook till 2 whistle.potatoes should be only half boiled.once pressure gets released,add sliced cabbage,turmeric and salt.mix and add water if required and cover and pressure cook for 3 whistle.you can cook in normal pan as well.In that case also cook potatoes first and when it’s half cooked,add cabbage.

3- Once the vegetables are cooked,add the ground masala paste and mix well.add water if required.this curry is semi thick,so keep the consistency accordingly.boil well for 5 minutes on medium to Low heat.switch of heat and keep aside.prepare tempering.

4- In a pan add 1 tbsp oil and once hot add mustard seeds and allow to splutter.add dry chilli and curry leaves,sauté for few seconds.pour this over the cooked gravy.mix well and serve.Can be served with rice or with chapati.
