Tinned mackerel pasta salad with halloumi



300 g pasta

1 tinned mackerel in tomato sauce

handful sweetcorn

2 cucumber pickles, chopped

handful pitted black olives

1 medium tomato, cut into small cubes

cubes halloumi cheese, cut into



drizzle of olive oil

1 crushed garlic clove

1/2 teaspoon dijon mustard

1 teaspoon light mayonnaise

squeeze lemon

salt and pepper

pinch smoked paprika


1- Cook the pasta in boiling salty water that tastes like the sea for 8-9 minutes (as per instructions)

2- Mix the dressing ingredients and pour it over the pasta and the other ingredients and that's all.

3- The tinned mackerel had tomato sauce that's why I used small quantities of the other ingredients in the dressing, but if you're using mackerel or tuna in brine you might want to use more mayonnaise and olive oil
