Quick Hoisin Beef & Cucumber Noodles



1 nest medium egg noodles,

125 g lean beef steak mince,

50 g finely diced cucumber,

2 heaped tsp hoisin sauce,

1 tbsp light soy sauce,

1/2 tsp garlic purée paste,

White pepper & tiny pinch salt to season,

1/2 tbsp vegetable oil for frying

1 birdseye chilli, seeds removed, sliced very finely (optional)


1- Begin cooking the noodles in boiling water according to packet instructions. Heat the oil in a wok over a high heat. Add in the beef mince. Fry for a couple of minutes, breaking it up in the wok.

2- Add in the garlic paste, hoisin sauce and light soy. Season with salt and pepper. Toss together in the wok to coat the meat. Continue to fry. Add a couple of tbsp of the boiling noodle water into the wok, stir then lower the heat to medium. Drain off the cooked noodles.

3- Add the cucumber in with the beef and toss together. Fry for 30 seconds then add in the noodles. Toss everything together until all ingredients are evenly distributed. Serve up and scatter over the red chillies. Enjoy. :)
